Wednesday in paradise...


First let me clarify the comcast payment thingy, our whole complex is on contract with them, over 1000 units.  I have no control over any of this but think they would not switch anyway.  That being said I am not timid or shy in any way and I am speaking up to them.  And I am not finished with it either.  Every time I call I tell them to put another credit on my account.  (I pay for the HD service and the second box.)  Right now I don't think I'll owe them anything for quite some time now.  But that said I still have no video on demand which I use all the time, or rather DID use all the time.  I'll see this through to the end, it's been since July 1st.  I did get another email from Mark at Comcast cares and I wrote him back with all the details.  We'll see.

I have been weighing in every morning for a long time now.  I usually either lose .2 or nothing or maybe .5 if I am really doing good.  Well yesterday I lost a whole pound in one day!  I do know I deserve it, I have not cheated at all and I have exercised like crazy but still, it felt wonderful to see a number I didn't expect to see yet.

My roasted chicken has seen the following meals for me, day one leg and thigh warm with crunchy skin, day two breast meat (no more skin) on a big salad, day three some bbq sauce on the other breast and today the other leg and thigh, no skin.  There is still enough bits for a sandwich so it was well worth the eight bucks I spent on the organic chicken.  The little fellow was delicious.  I still have the broth too.  I am learning this cooking for one thing as I go.

One other thing on the subject of chicken.  I don't remember if I told you or not but I roasted it upside down and I will do this from now on.  When it comes out of the oven it's nice and brown but the breast on the bottom has been self basted throughout the entire cooking time and it was so moist and juicy.  Try it yourself.  All I did was wash it good, add a bit of salt to the inside, twist the wings back and roast it at 350 for an hour and 15 minutes.  I don't like garlic but if you do you could put some inside.

Today is Mahjong and I am always glad to see those gals.  The one that had her knee replaced says she'll be back next week.  I have sure missed her too.  I had a good card day yesterday, won at both poker and canasta but not much.


I think we may be in for a storm in the near future.  Sure looks like it now anyway.  Buggers to that.  I'm hoping it will either weaken or change paths but right now we seem to be right in the cone.

  1. I get the best cooking idea from you. I will try this the next time I cook a whole chicken. Did you put it on a rack ?
    I have a wire thing that you can set your chicken on or an empty bear can works too. They come out so good that way and look very funny too !

  2. Congratulations on that weight loss!! It was probably from your walmart walk and swim day. Just took a few to kick in :-)

    Im going to have to try those muffins with the pineapple. It sounds delish.

    Hope that gentleman from Comcast can resolve that issue for you and quickly (i think you need to get something free for your troubles!)

    You are totally rocking the sensible healthier lifestyle! mahvelous dahling! And I can attest to the fact that when you're use to seeing a change of .1 or .2 everyday, just seeing the number to the left of the decimal drop is a BIG deal!

  6. It's annoying when you've been really good foodwise and exercisewise and don't lose much weight isn't it, so I'm glad you have seen a result. You seem to have the Comcast thingie in hand, good for you.

    I never thought to roast a chicken upside down but it makes a lot of sense, thanks for the tip. :)

  9. Rut roh on the storm... batten down the hatches! I just like saying that, I in no way am hoping it makes your life miserable.

    That chicken sounds great! I never know how to cook them, so I usually just buy a big bag of frozen breasts at Sams club, which are great on the George Foreman grill that I am in love with.

    44 sticks of butter gone from me! I can't weigh in everyday, I think it would make me neurotic. I try for twice a week and always do a little prayer before I look down at the number.. (please don't be higher, please don't be higher...) and each time its lower I am shocked! Just plain ol shocked at how great it feels. Yesterday I broke into the 270s!!!!!!!!!! That's a long time coming for me, I can't wait to hit 260's... my reward for that is the diamond earrings I have wanted for awhile. Hubby was getting them for my birthday, but I told him to wait. I want them to mark my 20lb weight loss!!! Won't be long now.... yay!!!!!!!!

    I'll have hubby do the next chicken that goes in the oven this way. Makes sense to me.

  12. The chicken sounds tasty. I always stuff a chicken with onion, garlic and lemon. It's quite tasty like that, too. I'll have to try roasting it upside down.

  14. I do mine upside down. Yes, it works! I love chickens. We can eat for a week off one! throw some veggies into that broth and make some yummy soup!

  17. Sorry I didn't get to you this morning. My tee time was 8:26 am and I was picked up at 8:00 am this morning. Later Mary Lou and I went to Al's home to do some work in his lawn and bushes. At 12:00 am Al and Meilin will be flying to Hong Kong and then back to the jungle. We won't see them until March.
    It seems that you are going to have a doozy of a hurricane if it come there. Sit tight my blowing lovely friend. See you tomorrow.
