Thursday in paradise...

Yesterday was a lovely MahJong game and I just love those gals.  I made some of my really low cal tuna salad and they liked it so much they want me to make it again next week.  We all bring snacks and make a pot luck luncheon every week.  We had fresh fruit salad, steamed shrimp, veggies and hummus, really good stuff.  And a great game.

Today is lunch at the club and canasta afterward.  It's a good game with good gals.  A fun day.  I am so lucky to have so many great gals in my life.  None are like a bff but on the other hand they would be there if I needed them as I would for them.  Most are widows, a few aren't.

Oh, my turkey meatloaf was really good.  I made it simple and low cal, only used some bread crumbs, one egg, one pound of 99/1 ground turkey, some tomato sauce, salt and pepper.  It made six servings at 135 calories each.  I have some for tonight and froze some too.  Thanks for the good ideas yesterday for cooking too.  I loved that.

Tomorrow I'm getting my hair cut.  Gosh it's long all of the sudden.  And hopefully it won't rain so I can swim.  Yesterday it rained and rained.  And then it rained.

Have a lovely Thursday y'all.  I will too...

  1. Oh, I will try the turkey meatloaf. I use to always make it with a third hamburger/turkey/pork, but I'll try just turkey!

Here's hoping for No Rain! big hugs xoxo

  3. It's fantastic that you have some good friends. Since my FIL passed away my MIL has found a new friend ( recently widowed) and they have great fun going out on trips and shopping with each other - it means a lot to both of them.

Hope you get to swim today. x

  5. Bummer on the rainy rain! Your meatloaf sounds great. I might have to try that. I have the ground turkey in the freezer just waiting for its moment to shine. :)

  7. Hi Bee, I meant to give you this little cake recipe yesterday but the day got away from me. This makes little, small individual cakes like in a custard cup or ramekin dish. You can make just one little cake at a time for only 2 WW points. The recipe is called 3 2 1 Cake. You can use ANY flavor along with the angel food cake, choc., lemon, orange, etc. Google 3 2 1 Cake for variations.

3 2 1 Cake. Get one box of angel food cake mix and a box of any other kind of cake mix. Mix together in a ziploc. Use 3 tbsp. of the mixed cake mixes and 2 tbsp. water. Microwave for 1 minute. Your own mini cake for 2 WW Points!

  8. It's raining here also Bee. Mary Lou took AmyLynn to see her neurosurgeon about her back. AmyLyn keeps saying anything but surgery. We'll see with results. I'll let you know. Boring day Bee. See you.

  10. It's wonderful to have friends that you like who would be there for you in an emergency. You obviously are a good friend yourself, to have that reflected in your life!
Enjoy the meatloaf, and hopefully a swim too:)

  11. I'd love the turkey meatloaf too. Sounds fabulous and low cal too.

I hope you have a day without any rain so you can go to the pool.

  12. Well .... it doesn't rain all the time and and some rain must fall. But I hope you can get in the pool today.
If you didn't get any rain then everything would dry up and you would get forest fires and then you couldn't breathe or go to the pool.
At lest that is what I tell my self when we get our monsoons and I can't swim everyday. And as you know we in Arizona only have two rainy seasons and we need all the rain we can get.

    cheers, parsnip

  13. I loved it that your group brings healthy snacks. What goes into your tuna? Inquiring minds want to know.
