Monday at my house...


Well let's start off with a recap of yesterday.  The sun actually came out!  Nice and warm too.  I went to brunch with the duck and saw Dr. Wacks and his wife there.  He was very happy and called me the duck's sister! Ha ha.

Then we went to the Walmart which was the usual zoo of a place but I got lots of good bargains in good food.  We found those chicken breasts that I buy in a big box (they are individually wrapped organic ones) and I got those too.  

I came home and was able to get in the pool.  I did 30 minutes of walking back and forth.  I think my hip is a bit better but I am being very careful.  My friend was there (the nurse) and she had a great suggestion.  She said for the next three days or so I should take Advil as an anti-inflammatory.  I'm doing that now.  I don't know why I didn't think of that myself.

Now remember today I have the eye doctor.  After that not much going on so I hope it's nice and I'll be at the pool then and in the evening I have poker.  It's usually on a Tuesday but since Tuesday is the high holy day we moved it to Monday this week.  

I like potatoes fried with onion.  Really like them.  Well yesterday I figured out how to do them very low calorie and so simple.  I sliced the onions thin and the potatoes thin as well.  Put a pile of them (enough for several meals) on a baking sheet, a little salt and pepper, some Pam spray, in they went at 400 for one hour.  They browned and they were delicious as a side dish.  I mean really delicious.  I don't think I'd ever fry them again.  No mess, no splattering oil, no fattening oil, just healthy good potatoes and onions.  Oh, and when I bake things like that I always use that non-stick foil.  I love that stuff, no pan to clean even!

  1. One day years ago ... trying to figure what to make as a side dish with three small potatoes, I came up with similar to yours. Slicing potatoes, onion and tomatoes very thin. Then laying out in a dish, potato, tomato and onion. Not stacking them but half touching (?) keep doing this in rows in a baking pan or dish sprayed with Pam add salt and pepper drizzle with olive oil or a bit more spray oil. Bake till done and somewhat crispy edges. Much like your dish so good ! Such a great combination. It has become a family favorite.
    Love your idea of the non stick foil must try that.
    Take care of that hip !

  3. I'll have to try the taters but with extra virgin olive oil. Not a huge fan of Pam. I was pleased to see this morning when I stepped on my scale that I dropped half a pound. I had baked haddock and steamed veggies last night and lots of water yesterday. More of the same today. Bugger to sodium!

    Can't wait to see what the eye doctor says about your blue eyes!

  4. Ooh, I like the potato idea. I am writing that down! Going to add some green peppers as well. I add them to everything these days to get a little more green in there when I can.

  5. It just makes me chuckle to think of a Wal-Mart in West Palm? When I was in that area 20 years ago--I never saw any kind of store like that. Everything was pretty upper end.

  6. Smart way to do the potatoes and onions, Bee!
    I bake chicken breasts in the oven for 45 minutes at 350 degrees with a bit of garlic olive oil in the bottom of the pan, I put fresh squeezed garlic, seasoned pepper and seasoned salt under the skin; and then take the skin off and throw it away after it's come out of the oven, but the smell as it is cooking, and the taste - yummmm!

    Smart too about the anti-inflammatory. Good to be walking in the pool, good to be careful, and may your hip be better each week!

    That Dr. Wacks knows how to talk to women:)

  11. Great idea on the taters and onions, I used to do something steamed in foil using lemon pepper.

    Advil is a miracle drug. Love it!

  12. Sounds good and I like Lisa's idea of the green peppers. Even more yummy. I just might have to give that a try when I'm off the lean cuisine. I'm doing okay right now. I've not weighed myself since Friday morning so have no idea how I've done this weekend. I've sure been good though.

    What going on Tuesday at the clubhouse? High Holy Day? Okay, I'm spiritual, but not religious. I've missed something.

  18. I do potatoes like that too but use extra virgin olive oil which I put in a spray bottle. Also do sweet red peppers, courgettes (zucchini to you),egg plant, anything you can slice and lay out flat. It is all delicious. Hope the eye doctor visit goes well.
