Wednesday is Mahjong!


I love this brand of chicken and can get it in the Walmart


Remember I roast my chicken upside down.
The breast is so moist and tender then!

I also strain the broth and refrigerate it and then take off all the fat.  It makes wonderful soup!  All the little bits of chicken go in there too.  But for now I have the good parts to eat first.

What do I put on my chicken?  Why I am so glad you asked.  1/2 teaspoon of salt.  That's it.  I like it rather plain but feel free to stuff it with veggies and add seasonings too.  Just not me.

Today we are playing Mahjong at the club because the party room is being used so we'll have lunch there first.  They have a new menu and I love the new salads.  They used to be so huge and now you can get a smaller one if you want and they are plenty.  

I seem to be on quite a plateau as far as the scale goes but I'm not worried, it'll start moving soon.  It's just a tiny bit discouraging when I know I am exercising and eating 1200 calories a day.  This too shall pass.

I won again last night at poker but not nearly as much.  At break I was ahead about a hundred and a half but at the end of the night I was only up thirty bucks.  Anyway a win is a win and I like it.

  1. I need to thaw our chicken in the freezer. A baked chicken just sounds so good right now.

  2. I never buy a chicken to roast anymore. I just pick up a rotisserie chicken and that is absolutely perfect for me. I just take the skin off and either make a salad, a pie or a sammich. Easy Peasy and yummy.

    MotherDear just made a big old pot of soup with rotisserie chicken the other day... which is just about gone. My all-time fave meal is still a roast chicken dinner which MD makes about once a month. My sensible choices are making her get a bit frustrated with me as I won't eat a lot of what she's fixing. Poor thing. But hey... Ya gotta do what ya gotta do though, right? :)

  3. I love roast chicken but often like Barb I just buy Rotisserie. I can buy a small one for 3.99 and no prep and cook.

  5. I had to drop down to 1,000 calories a day and that helped get me started again. It's because I can't walk as much this time of year.

  6. Last night my mom looked much better but she's still in the emerg. It's so stupid that they have yet to find a room in the hospital. I called one of my government people and they told me to write a letter to him even though they MPP's ( government bigshots )are still out for Christmas break. Stupid, stupid.
    my plugins and videos are back better then ever now I have no sound from my computer. Since I got my new computer I've had nothing but problems.
    Our cruise is coming soon Bee. I"m like a little kid waiting for Christmas opening up my gifts. See you soon my gorgeous friend.

  7. A nice roast chicken is a comforting meal. I have boneless chicken breasts in the crock pot, with just some seasoning and a can of reduced fat chicken broth.
    We'll have it with rice and salad. There is enough chicken for two meals, so we will make chicken chili tomorrow.

    Semi-organized today! Yay!

    That's good that they scaled down the salad size and it's still plenty.

  9. We only buy the chicken breasts at Costco. A whole chicken wouldn't work for us because we really don't care for the dark meat. We don't use much salt around here. Well not since I've gotten rid of eating Lean Cuisine all the time. Much better.

    Way to go on the win. Two weeks in a row is awesome.

  11. Bee, I have been learning so much from your blog. I read the comments of others too. I am amazed at how clever people are. Love it. I like what you said about roasting the chicken like you do. Then Mrs. Bell said she boils the bones for more flavor in soups. wow. I am not craving the sugars as badly as I thought I would. Good for me. xoxo,Susie

  13. I love chicken but I don't buy a whole chicken, just not enough freezer space and I can't see the two of us eating a whole one before it went bad.
