1 cake mix - 12 cupcake size
(do not follow box directions, instead add the following)
1 teaspoon coconut oil or whatever oil you use
1 cup coffee
1 container egg beaters
bake at 350 degrees 21 minutes
Frost with some fat free cool whip
and you have a
95 calorie cupcake!
They are moist and delicious. I froze the rest so I can take one out any time and dab some topping and have a treat. It's nice to have cake in the house! Cake makes me happy. Very happy. But you already know that!
Boy howdy yesterday I did my 30 minutes of water jogging just as this woman I didn't know got in the pool so we started talking and I kept jogging, well I did it for another 30 minutes without thinking about it. It felt soooooo good! And she was a very nice lady from Toronto.
Today is my grocery day but I don't need much. I already have cake! Have a lovely day my friends... you know I will too!

ReplyDeleteI have chocolate cake mix and whipped cream, but no egg beaters. Well, actually I have never had egg beaters. I do have some pineapple upside down cake mix and applesauce though so I could make those yummy cupcakes! Yessiree!
ReplyDeleteI baked chicken last night with steamed broccoli, cauliflower and carrots. Oh, and some blackeyed peas, too. I haven't had baked chicken in a month or more, what with the holidays and all. It was deelish!

ReplyDeleteWell there you go if you crave chocolate cupcakes. I don't, but this is a great option for folks that have a sweet tooth. You're sure learned all the tricks to have a healthy eating plan and have delicious food including desserts. That rocks.

Never cooked with egg beaters, I make breakfast but not much beyond that. You put the whole carton in, isn't that like 6 or 8 eggs ? I use coconut oil too.
ReplyDeleteI have tried a few cake mix cupcakes but they seem to be so sweet to me for me. Maybe the cake mixes themselves are too sweet for me ?
That said your cupcakes look wonderful and the addition of coffee must be the secret.
I think I might try this out one day.
