Fresh green beans
Piece of lean low sodium ham
Cut up potatoes
Pepper/tiny bit of salt
Water to cover bottom of pan
Bring to boil, reduce heat and simmer covered 2 hours
200 Calorie meal!
Now I realize Yankees only cook fresh green beans two or three minutes but in the south we cook them and they are delicious. This made three meals for me but would feed a family if you added bread or another vegetable or maybe a salad. And for some reason I like my green beans whole, I have no earthly reason why, I just do.
Years past I would make this with a ham hock but I really don't like all that fat now, this way is much better. Sometimes I also use cabbage instead of green beans. I like it just as much and it's just as filling and healthy and low calorie.
If you aren't liking the cooking stuff I'm sorry, I'll try to tell you other stuff so you'll be interested too but us Bee Bandwagoners are on a roll y'all! Happy and healthy we are! 2013? Bring it!
Since I ate way too many of the cookies I baked this Christmas I'm going to have to join your bandwagon. I need to drop about 10 pounds or do as does my hubs...ciao

Oh, that looks dee-lish! I don't mind if my green beans are cut or whole. As long as they are cooked long and slow. :)
ReplyDeleteI'm going to try this dish!! How many taters, green beans and was that part of a ham steak? This dish is something both of my parents will enjoy, too. Although they definitely need some fat! I totally did not get that gene.

I like my green beans whole, too. Your meal looks inspiring. I am going to loose some weight this year. I had lost 47 lbs. and then lost my motivation and gained 10 lbs. back. How do I join the Bee bandwagon?

ReplyDeleteYou fixed those green beans the way I do. I want them cooked. I want them tender. They can be whole or not though. That really looks good and I'd add a small salad if it was dinner. Lunch no, but dinner yes.

ReplyDeleteI am one of the ones who lightly cook their green beans but I have had the slow cooked ones like you made and they were so good. I must try this. Looks like a nice winter type of meal.

My hubby is slowly joining the ranks, too. Finally. I hope sticks with it. There's some bad stuff in his genes and I have been after him to be more proactive to avoid the illnesses that befell his father.(God rest his soul!)

ReplyDeleteI like my green beans whole most days. I steam them for 5-8 min then add to a pan that has sauteed garlic for garlic green beans. My greens stay very green and still slight crisp. Yes I am not from the south. While your food looks yummy I would have added the beans in just to get them cooked .
ReplyDeleteSpeaking of cabbage, I saw a post on pinterest where they cut the head into fairly slices and roasted it in the oven with salt and pepper. That sounds absolutely wonderful!
