Bee bandwagon turkey cabbage rolls...

One pound of turkey, the really lean kind...

Toss it with some tomato sauce, an egg and some uncooked rice.
Whatever seasoning you like, I only used a tiny bit of salt and
some cracked black pepper.  I like it simple.
Give it all a mix.

Wrap some cabbage leaves around it, about 1/4 cup of meat in each one.
Pour some tomato sauce over it, chunky kind if you want.

Hey, there was enough left for a few stuffed peppers too!  Love those!

And since I have to fire up that oven I might as well add some roasted
veggies, enough for a few meals for me.
No oil, just some spray and a touch of salt and pepper.

Put it all in the oven at 400 for an hour and a quarter.
You don't even need to open the oven, it'll be fine in there.

And dinner is served.  This entire plate of food is only 378 calories!
Now I know it's all kind of the same color but I don't mind.
You can easily add some green color on your plate if you want.
I have lots of left overs too, I'll freeze individual meals.

  2. Sounds delicious and very economical too Bee! :)

I usually cook enough for 4 and freeze 2 for a later date.

  3. So you don't cook any of it before you put it in the oven? That sounds almost too easy peasy! Did you mix up the turkey/egg/tomato/rice like a meatball before you rolled it in the cabbage? Surely you must. I have everything but the cabbage. I'll have to take this one out for a spin!

I was a little bit naughty yesterday. I had one of those little lemon pies last night. On top of the extra serving of to-die-for trail mix. oopsie! But I listed it on my food tracker and moved on! :)

Have yourself a YAYful day! big hugs xoxo

  4. Hmmm, Turkey in a Blanket!!! :) I am not much of a cabbage fan, but I would definitely stuff a pepper with that yummy stuff.

Did I ever thank you for saving my life? I know if my daughter were old enough to understand what you've done for me, she'd thank you as well.

It wasn't just the high BP scare that got me going on the right track. It was seeing your successes, your struggles and knowing that it could work. You motivated me daily. I can't even begin to list all of the changes I've made as a direct result of your sharing and encouragement. I want to be healthy, I look forward to, and enjoy walking.

So, thank you for adding years to my life!!!

  8. I love cabbage rolls! It's my favorite food. Add some minced onion and a bit of paprika to the meat part . The paprika gives it a hungarian twist. I also add a tad of sugar/splenda, and a can of sauerkraut (drained and slightly rinsed to remove excess salt) to the tomato sauce.

I just love cabbage... such a yummy and versatile veggie. and it reheats well. YUM!

  11. Turkey is the penance one must pay for getting to eat stuffing. And cabbage? Didn't all our ancestors leave Europe so we would never have to eat cabbage again?

(Don't mind me, Bee, I'm just feeling snarky today. I'd put in a smiley face if I knew how. Or could stand the thought of putting in a smiley face....)

  14. Cabbage rolls! I used to make them all the time. I have completely forgotten about them. With this new batch of cabbage coming on I should definitely make some. Summer cabbage all went to my new fetish - real sauerkraut, the fermented kind. But I love cabbage rolls. Oh and your roasted veggies, one of the gazillion things I love about autumn is roasted vegetables. Your plate looks good to me!
