Well this sure looked good in the recipe but honestly I didn't like it nearly as much as I thought I would. I think quinoa would be a great addition to soup in place of a starch but that's about it. Does anyone love it or have a recipe they love for quinoa? I'd try another one I think. Just in case. Anyway this one has cooked and cooled quinoa, lemon juice, olive oil, cucumbers, red peppers, tomatoes, salt and pepper.
So yesterday I was sitting at my desk playing with some beads when the sun came out and I grabbed my bathing suit and got down there as quick as I could. I did about 15 minutes and it started raining again. Well I guess 15 minutes is better than nothing so I came back upstairs, got my shower, got on my gown and danced! Why not? It's good exercise, it's fun, it's free, and I like it. Plus no one could see me so I didn't care if I didn't dance like a rock star.
Today is grocery day and I'll get to see the duck. Maybe we'll have lunch too, we'll see. He's been back on his diet pretty good too. After his thyroid problem he had to adjust his diet and the medication until it was controlled properly but it seems he has it under control now. Him and Dr. Wacks that is.

The picture looks tasty, but I've never tried quinoa or hummus. I see recipes for both of them but wouldn't even know where to begin! But I make a mean Chili Verde!

Quinoa is not something I want or need. Plenty of other rices, etc out there. And YAY for seizing the little bit of sunshines while you could!

I have eaten Quinoa but never cooked it, and right now I don't remember where I ate it! It was good, though. Glad you got to swim a little, and dancing IS fun! Enjoy your day and your time with the Duck.

For some reason Bee, I lost 3 lbs this week and I back to where I was. Now I'll start losing lbs again. I thought I was going to gain this week but wow.I'm so happy. Back to normal as normal I can. Have a great day my gorgeous friend.

Not a fan of quinoa. My Mom's friend's tried to turn us on to it when we went to visit them in Colorado but not my thing.

The trick for me is that I use vegetable stock or broth, whichever I have, rather than water. Gives a really yummy taste. I made it today with steamed carrots and roasted sweet onions.

ReplyDeleteI love quinoa and use it in place of rice in those recipes that call for "serve this over rice." I have also used it in risotto, and love it as a side dish. It is so good for you. ReplyDeleteI make quinoa pretty regularly. my favorite ways to eat it...
ReplyDeletequinoa (cooked in veggie or chicken broth), with a few scoops of lentils on top, avocado on top of that, and then a dollop of garlic aoli on top of THAT. so tasty!
also
quinoa (cooked in broth, again), mixed (while still hot) with cream cheese and your favorite spices, topped with any veggies you like (i usually put in onions, broccoli, carrots, garlic, sugar snap peas, etc), then topped with some fresh parm (just a few scrapes!).
i've also had it for breakfast-- i make it normal (no broth, just water) then add honey, cinnamon, nutmeg, raisins, nuts, maybe some yogurt. it's pretty yummy!
Not a fan of quinoa myself. It is good to rotate different grains and things like grains in our diet but that one only finds its way in by accident, like pot lucks.
