The omelet...


Remember those roasted mushrooms and onions I kept aside?
Well here they are, repurposed for a delicious omelet!


Warm them first and then pour the egg/egg beaters slowly over them.


Cook until set and fold over the edges.


Add 40 calorie wheat toast, some jam, and some salsa.
250 calorie plate!

Yesterday the duck and I went out for an early supper to the Cheesecake Factory.  Since they now have those wonderful skinnylicious things it's easy to eat there.  I had the best salad of my life, it had chicken and black beans and all kinds of wonderful things and I was able to stay on target with it too.  It was so big I actually ate until I got tired!  I never did finish it either.  Too bad the dressing was already on it because I couldn't bring it home, it would have been all soggy if I tried.  Anyway it was wonderful and I will have it again next time.

  1. I hope it'll be warm enough to swim. Getting ready to turn in for bed. We set out this morning and didn't get back home until after dark. Never did get to cook my blackeye peas and collards. So I guess we'll get them tomorrow. LOL!

    So much for trying.

  4. Well this morning I go to see a tailor to fix my second suit. Of course my new one from last year is to big now since I've lost my weight. Also I have seven pair of pants and I only have one that fits. Time to buy a new one.
    I enjoyed talking to you yesterday morning. I can't wait to see you and Chuck on the Breeze soon.

  7. Your breakfast looks awesome. I just don't like egg beaters. I'd have to put lots of veggies in them to get them down. So I've eliminated eggs from my diet altogether. Bugger.

    Now that salad sounds wonderful. I eat lots of salads too and I always put the dressing on the side. Then I eat very little of the dressing. Yummy.

    I never think to use it anywhere besides corn tortillas for a snack! My dad swears by it as a topper for baked potatoes too!

    We're not much for mushrooms at my house, but I would definitely use green peppers and tomoatoes to spice up an omlette these days.

  11. I purchased a "green fry pan" not the color green they are actually grey colored. However, you don't need to spray the pan before cooking. I've used it a few times with pancakes and eggs and it seems to work really well of not sticking.

  12. My bil Rick made us all a yummy ham and cheese omelet yesterday and we finished up my potato casserole with it and some OJ... pretty sure it wasn't 250 calories through.

    I weighed myself as soon as I got home. I didn't do half as bad as I thought. I'll know for sure in the morning, which is when I normally weigh myself, but I think it will be pretty good! And tonight is baked haddock. YAY!

  14. I am probably the world's worst omelet maker but I bet I could put all of those veggies into some scrambled eggs and it would taste just as good!

  15. Next time, maybe ask for a take home box right away and split up the salad before you start digging in...and of course, get the dressing on the side.
