Bee bandwagon blueberry muffins!


Now before I get started let me tell you these are not overly sweet.  If you want a sweeter muffin you could easily add more honey or drizzle a light glaze on top.  They are only 75 calories each the way I made them though.  If I were to do them again I would not use the cupcake papers but rather spray the muffin tins.  Okay here goes:

2 Cups self rising flour
1/2 Cup honey (or sugar)
3 T oil
1 Container blueberries
1 Egg or one small container of egg beaters
1 packet instant oatmeal
1 small container plain greek yogurt
1 t vanilla
about a cup of skim milk or water, enough to make the batter right

Gently mix and make 18 muffins.  Bake at 350 for about 32 minutes or until slightly browned on top.  These were completely invented by me - for you.  There you go, another great treat for your enjoyment!

It's way too cool to swim so I am going to the gym at the club.  I hope I don't do anything to hurt my hip.  I know exactly what I can do in the water but not sure on the machines.  Maybe I'll just walk and only do upper body at the gym.  We'll see.

    It's been chilly here, but it happens to be my favorite weather. I wait all year for it... just a bit of crispness in the air. Not hot. Not cold.

  4. Bee, Those muffins look so yummy! Wish I had blueberries because then I would make them today since I'm stuck in the house - we got 10 inches of snow so I'm not going anywhere today!! Be careful at the gym, you don't want to hurt yourself. Enjoy your day!

  5. The muffins look really good. I'll be trying them or Mary Lou will. All the pumpkin muffins are all done. We all enjoyed them. I"m by myself again. Mary Lou had to take AmyLynn to see her doctor in Windsor and after they will probably do some shopping. I'll go for a walk later. See you Bee.

  7. Good for you going to the gym, it would be so easy not to do any exercise at all because the pool is too cool. :)

  8. Yay for you doing something out of your comfort zone. Just be careful, maybe ask one of the trainers or lookup some stuff online that is safe for you.

    I have to do the same. I want to start doing some ab/tummy toning, but am very concerned about aggravating my lower back issues. I need to do some research and talk to my chiropractor.

  9. Yum...love me some blueberry anything! This would be good on my own plate (love yours!) this morning, if I had one. No baking today; getting everything put back in place after the party last night. Wish you could have been here! No icing on either cake:)

    It's freezing cold here this morning. Okay, not freezing, but it's way cold. We have a system coming through and it's supposed to rain on Friday. We're still going to boat over to Rio Vista for our holiday dinner with our yacht club. We don't let a little weather get in our way.

  12. I'd stick to walking and upper body stuff. Check online to see what is safe for your hip. I'd hate to have you aggravate it. Big hugs from a chilly PNW.

  13. Hi, Bee - I made your pumpkin muffins for my jewelry party last Saturday, and they were a hit! Made them in mini muffin tins, so it made several dozen. I will probably make some more before the family arrives for Thanksgiving. Thanks again for sharing your recipes with us.
