Yesterday was so beautiful I doubled my exercise in the pool from 15 minutes to 30. My muscles were very tired afterward but I seemed to be none the worse for wear. That tells me I should be doing at least that. I'll admit I was watching the clock on the wall out there toward the end and struggling but I made it and it felt good.
Then I came in and put dinner in the oven. Braised cabbage with carrots, onion, potatoes, and a piece of very lean ham. Some tabasco and a touch of olive oil and a smidgeon of salt, pepper, and balsamic vinegar seasoned it. I roasted it covered at 350 for 2 1/2 hours. It was a recipe I saw somewhere online but I don't remember where. I read so many recipes I lose track. But there is plenty left for tonight and then some. If I make it again I will not add the vinegar, just my personal taste. 3 cups is 185 calories.
I love a pot of something that I can cook once and eat several times. I love leftovers and always have. I guess it goes back to my mother. Never threw anything out, depression era mentality but she was a good cook and the leftovers were always good.
You know that reminds me. When I was growing up my mother fixed the plates. You got a plate of food. Not a mountain of food. It was balanced, nourishing, and good. And that was it. We were not fat, none of us. Portions were much different then. And they were the correct portions, now we eat too danged much. At least I did, I shouldn't try to speak for anyone else. Oh, another thing, we sat at the table and talked, no tv. Seven nights a week. Period.
Today the new terrace chairs are to arrive but I still have to get someone to put them together. The duck said he'd do it if he can get off work for a bit. Otherwise I'll get the maintenance guy if he can. Anyway I won't be home because I have Canasta today and poker tonight but it's a perk living in a condo, I asked them to have it put in my unit for me and they will. When they are ready I'll post a photo so you can see them.

Me, too! Cook once, eat twice... or even thrice! When I was growing up MotherDear did not have time to fix all of our plates! Ha! We started at one end and passed around the bowls of stuff and had a big old lazy susan in the center for condiments and napkins and stuff. No big portion sizes allowed. If you finished and everybody had some and there were leftovers, sometimes we got seconds.

It's good to up your exercise because your body gets used to a certain amount. Whenever I cook things like stews, casseroles etc I always make double and freeze half for another time, it always tastes better second time around too. It's interesting that during the war, when food was rationed, the population here were much healthier, obviously because they weren't eating too much!

I'm picky about my leftovers. Our plates were fixed as well. And yes, we do have portion distortion. Restaurants are guilty of that. I'd uch rather have less quantity and more quality.
ReplyDeleteI like leftovers, too. No new pots to clean. Less waiting. Microwaves are a wonderful thing. When it's just Long Suffering Spouse and me, we might get a week out of two entrees. When the kids are over to visit... well, we might get one meal out of the same two dishes. *Sigh*

ReplyDeleteSome leftovers are great and some are just so-so. We don't waste food either and leftovers are a part of our lives too. I love the sound of your dinner and I'd not put the vinegar in either. Personal preference too.
Way to go on the exercise. Upping the time is a good thing. You'll see the difference too.

I like leftovers, too. We serves ourselves but sis not waste food. Mother did not demand a clean plate from us because she has lived that way and just knew that some times our eyes were bigger than out stomachs! We were active after school and many times worked on the farm till dark. She knew that we would be extra hungry on those days!
ReplyDeleteMy family always sat down together and we talked...the only time we might have the tv on was on Sunday during football season so Dad could keep up with the score. I'm trying to get into that habit with S.D. though, he has a tendency to whip out his iPhone even after I yell at him. ;)
ReplyDeleteWe always sat down for dinner...seven days a week. I try to do it now, too, but our schedules are so scattered that someone is guaranteed to be reheating their dinner.
